Steps
- Cook the udon noodles according to package instructions, then drain and set aside.
- In a large skillet or wok, heat olive oil over medium heat.
- Add minced garlic and ginger to the skillet; sauté for 1-2 minutes until fragrant.
- Add the sliced eggplant and bitter melon to the skillet; stir-fry for about 5-7 minutes until the vegetables are tender.
- Pour in coconut aminos and sesame oil, stirring to coat the vegetables evenly.
- Add the cooked udon noodles to the skillet, tossing everything together for another 2-3 minutes until heated through.
- Season with salt to taste and remove from heat.
