  • Bitter melon - 1 small, thinly sliced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Coconut aminos - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Green onions - 2, chopped
  • Sesame seeds - 1 tablespoon, toasted
  • Salt - to taste

Steps

  1. Cook the udon noodles according to package instructions, then drain and set aside.
  2. In a large skillet or wok, heat olive oil over medium heat.
  3. Add minced garlic and ginger to the skillet; sauté for 1-2 minutes until fragrant.
  4. Add the sliced eggplant and bitter melon to the skillet; stir-fry for about 5-7 minutes until the vegetables are tender.
  5. Pour in coconut aminos and sesame oil, stirring to coat the vegetables evenly.
  6. Add the cooked udon noodles to the skillet, tossing everything together for another 2-3 minutes until heated through.
  7. Season with salt to taste and remove from heat.
  8. Serve hot, garnished with chopped green onions and toasted sesame seeds.
