Ingredients

  • Japanese eggplant - 200 grams
  • Bitter gourd - 100 grams
  • Cucumber - 100 grams
  • Carrot - 50 grams
  • Sesame oil - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Coconut aminos - 1 tablespoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Sesame seeds - 1 tablespoon
  • Salt - to taste

Steps

  1. Preheat a grill pan over medium heat.
  2. Slice the Japanese eggplant lengthwise into quarters and sprinkle with salt. Let it sit for 10 minutes, then rinse and pat dry.
  3. Grill the eggplant on the preheated grill pan for about 3-4 minutes on each side until tender and charred.
  4. While the eggplant is grilling, slice the bitter gourd, cucumber, and carrot into thin strips.
  5. In a large bowl, combine the grilled eggplant, bitter gourd, cucumber, and carrot.
  6. In a separate small bowl, whisk together the sesame oil, rice vinegar, coconut aminos, and a pinch of salt.
  7. Pour the dressing over the salad and toss gently to combine.
  8. Garnish with chopped cilantro and sesame seeds before serving.
