Ingredients
- Japanese eggplant - 200 grams
- Bitter melon - 100 grams
- Cauliflower rice - 300 grams
- Coconut oil - 1 tablespoon
- White miso paste - 2 tablespoons
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green onions - 2, sliced
- Sesame seeds - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 200°C (400°F).
- Slice the Japanese eggplant in half lengthwise and score the flesh in a crisscross pattern. Sprinkle with salt and let it sit for 10 minutes to draw out moisture.
- While the eggplant is resting, slice the bitter melon in half, remove the seeds, and thinly slice it.
- In a bowl, mix the white miso paste, minced garlic, grated ginger, and a tablespoon of coconut oil until well combined.
- Rinse the eggplant under cold water and pat dry. Brush the miso mixture on the cut sides of the eggplant and place them on a baking sheet.
- Toss the sliced bitter melon with a little coconut oil, salt, and pepper, and spread it on the same baking sheet.
- Roast the eggplant and bitter melon in the oven for 20 minutes, or until the eggplant is tender and slightly caramelized.
- While the vegetables are roasting, heat a skillet over medium heat, add the remaining coconut oil, and sauté the cauliflower rice for about 5-7 minutes until it is tender.
- Remove the roasted vegetables from the oven and let them cool slightly.
- To assemble the bowls, place a generous portion of cauliflower rice in each bowl, top with the roasted eggplant and bitter melon, and garnish with sliced green onions and sesame seeds.
