Ingredients

  • Japanese eggplant - 2 medium

  • White miso paste - 3 tablespoons

  • Rice vinegar - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Fresh ginger - 1 teaspoon, grated
  • Green onions - 2 tablespoons, chopped
  • Sesame seeds - 1 tablespoon, toasted

Steps

  1. Preheat the grill or a grill pan over medium heat.
  2. Slice the Japanese eggplants in half lengthwise and score the flesh in a crisscross pattern without cutting through the skin.
  3. In a small bowl, mix the white miso paste, soy sauce, rice vinegar, sesame oil, and grated ginger until smooth to create the miso sauce.
  4. Brush the cut sides of the eggplant with olive oil and season with a pinch of salt.
  5. Place the eggplants cut side down on the grill and cook for 5-7 minutes until they are tender and have grill marks.
  6. Flip the eggplants over and brush the miso sauce generously on the cut sides.
  7. Continue grilling for another 5-7 minutes until the sauce is caramelized and the eggplants are fully cooked.
  8. Remove from the grill and sprinkle with chopped green onions and toasted sesame seeds before serving.
