Steps
- Preheat the grill or a grill pan over medium heat.
- Slice the Japanese eggplants in half lengthwise and score the flesh in a crisscross pattern without cutting through the skin.
- In a small bowl, mix the white miso paste, soy sauce, rice vinegar, sesame oil, and grated ginger until smooth to create the miso sauce.
- Brush the cut sides of the eggplant with olive oil and season with a pinch of salt.
- Place the eggplants cut side down on the grill and cook for 5-7 minutes until they are tender and have grill marks.
- Flip the eggplants over and brush the miso sauce generously on the cut sides.
