- Shirataki noodles - 200 grams
- Eggplant - 1 medium (about 250 grams)
- Firm tofu - 150 grams
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Spring onions - 2, chopped
- Red chili flakes - 1/2 teaspoon (optional)
- Salt - to taste
- Black pepper - to taste
- Fresh basil or cilantro - for garnish
Steps
- Drain and rinse the shirataki noodles under cold water, then set aside.
- Cut the eggplant into small cubes and sprinkle with salt. Let it sit for about 10 minutes to draw out moisture, then rinse and pat dry.
- In a non-stick skillet, heat sesame oil over medium heat. Add the minced garlic and grated ginger, sauté for 1 minute until fragrant.
- Add the cubed eggplant to the skillet and cook for about 5-7 minutes, stirring occasionally, until softened and slightly golden.
- Crumble the firm tofu into the skillet and add soy sauce, black pepper, and red chili flakes (if using). Cook for an additional 5 minutes, stirring gently to combine.
- Meanwhile, in a separate pot, bring water to a boil and add the shirataki noodles. Cook for about 2-3 minutes, then drain and rinse again.
- Add the cooked shirataki noodles to the skillet with the eggplant and tofu mixture. Toss everything together and heat through for another 2-3 minutes.
- Serve immediately, garnished with chopped spring onions and fresh basil or cilantro.
