- Mozzarella cheese - 100 grams, shredded
- Green onions - 2, chopped
- Sesame seeds - 1 tablespoon
- Salt - to taste
Steps
- Preheat the oven to 220°C (428°F).
- Roll out the pizza dough on a floured surface to your desired thickness and shape, then transfer it to a baking sheet or pizza stone.
- Slice the eggplant into 1 cm thick rounds, sprinkle with salt, and let them sit for about 10 minutes to draw out moisture.
- In a small bowl, mix the miso paste, mirin, and sugar until smooth to create the miso glaze.
- Rinse the salted eggplant slices under cold water and pat them dry with a paper towel.
- Brush a skillet with olive oil and heat over medium-high heat, then add the eggplant slices and cook for about 3-4 minutes on each side until tender and slightly browned.
- Spread the miso glaze evenly over the cooked eggplant slices.
- Place the pizza dough in the oven and bake for about 10 minutes until it starts to turn golden.
- Remove the pizza from the oven, sprinkle the shredded mozzarella cheese on top, and arrange the glazed eggplant slices over the cheese.
- Return the pizza to the oven and bake for an additional 5-7 minutes until the cheese is bubbly and golden.
- Once done, remove the pizza from the oven, and sprinkle with chopped green onions and sesame seeds before slicing and serving.
