Ingredients

  • Pizza dough - 200 grams
  • Eggplant - 1 medium (approximately 200 grams)
  • Miso paste - 2 tablespoons
  • Mirin - 1 tablespoon
  • Sugar - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Mozzarella cheese - 100 grams, shredded
  • Green onions - 2, chopped
  • Sesame seeds - 1 tablespoon
  • Salt - to taste

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Roll out the pizza dough on a floured surface to your desired thickness and shape, then transfer it to a baking sheet or pizza stone.
  3. Slice the eggplant into 1 cm thick rounds, sprinkle with salt, and let them sit for about 10 minutes to draw out moisture.
  4. In a small bowl, mix the miso paste, mirin, and sugar until smooth to create the miso glaze.
  5. Rinse the salted eggplant slices under cold water and pat them dry with a paper towel.
  6. Brush a skillet with olive oil and heat over medium-high heat, then add the eggplant slices and cook for about 3-4 minutes on each side until tender and slightly browned.
  7. Spread the miso glaze evenly over the cooked eggplant slices.
  8. Place the pizza dough in the oven and bake for about 10 minutes until it starts to turn golden.
  9. Remove the pizza from the oven, sprinkle the shredded mozzarella cheese on top, and arrange the glazed eggplant slices over the cheese.
  10. Return the pizza to the oven and bake for an additional 5-7 minutes until the cheese is bubbly and golden.
  11. Once done, remove the pizza from the oven, and sprinkle with chopped green onions and sesame seeds before slicing and serving.
