Ingredients

  • Almond flour - 120g
  • Tapioca flour - 30g
  • Egg - 1 large
  • Olive oil - 2 tablespoons
  • Water - 60ml
  • Salt - 1/2 teaspoon
  • Eggplant - 1 medium, sliced
  • White miso paste - 2 tablespoons
  • Maple syrup - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Green onions - 2, chopped for garnish
  • Sesame seeds - 1 tablespoon for garnish

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a mixing bowl, combine almond flour, tapioca flour, salt, and egg. Mix until well combined.
  3. Gradually add water and 1 tablespoon of olive oil to the flour mixture, kneading until a dough forms.
  4. Place the dough on a parchment-lined baking sheet and flatten it into a round shape, about 1 cm thick.
  5. Bake the flatbread in the preheated oven for 10-12 minutes or until lightly golden.
  6. While the flatbread is baking, prepare the eggplant by slicing it into rounds and brushing both sides with olive oil, then placing them on another baking sheet.
  7. Bake the eggplant for 15 minutes or until tender and slightly caramelized.
  8. In a small bowl, mix white miso paste, maple syrup, and sesame oil until smooth to create the glaze.
  9. Once the flatbread and eggplant are cooked, spread the miso glaze evenly over the baked flatbread.
  10. Top with the roasted eggplant slices and return to the oven for an additional 5 minutes.
  11. Remove from the oven, garnish with chopped green onions and sesame seeds, and slice into wedges to serve.
