- Almond flour - 120g
- Tapioca flour - 30g
- Egg - 1 large
- Olive oil - 2 tablespoons
- Water - 60ml
- Salt - 1/2 teaspoon
- Eggplant - 1 medium, sliced
- White miso paste - 2 tablespoons
- Maple syrup - 1 tablespoon
- Sesame oil - 1 teaspoon
- Green onions - 2, chopped for garnish
- Sesame seeds - 1 tablespoon for garnish
Steps
- Preheat your oven to 200°C (400°F).
- In a mixing bowl, combine almond flour, tapioca flour, salt, and egg. Mix until well combined.
- Gradually add water and 1 tablespoon of olive oil to the flour mixture, kneading until a dough forms.
- Place the dough on a parchment-lined baking sheet and flatten it into a round shape, about 1 cm thick.
- Bake the flatbread in the preheated oven for 10-12 minutes or until lightly golden.
- While the flatbread is baking, prepare the eggplant by slicing it into rounds and brushing both sides with olive oil, then placing them on another baking sheet.
- Bake the eggplant for 15 minutes or until tender and slightly caramelized.
- In a small bowl, mix white miso paste, maple syrup, and sesame oil until smooth to create the glaze.
- Once the flatbread and eggplant are cooked, spread the miso glaze evenly over the baked flatbread.
- Top with the roasted eggplant slices and return to the oven for an additional 5 minutes.
- Remove from the oven, garnish with chopped green onions and sesame seeds, and slice into wedges to serve.
