Ingredients

  • Japanese eggplant - 2 medium
  • Miso paste - 3 tablespoons
  • Mirin - 1 tablespoon
  • Sugar - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Whole grain burger buns - 2
  • Cucumber - 1 small, sliced
  • Shredded lettuce - 1 cup
  • Radish sprouts - 1/2 cup
  • Green onions - 2, chopped
  • Olive oil - 1 tablespoon
  • Salt - to taste

Steps

  1. Preheat the grill or a grill pan over medium heat.
  2. Slice the eggplants in half lengthwise and score the flesh in a diamond pattern, being careful not to cut through the skin.
  3. In a small bowl, mix miso paste, mirin, sugar, and sesame oil to create the glaze.
  4. Brush the cut side of the eggplants with olive oil and sprinkle with a little salt.
  5. Place the eggplants cut side down on the grill and cook for about 5-7 minutes until they are tender and have grill marks.
  6. Flip the eggplants over, brush the glaze generously on the cut side, and grill for another 3-5 minutes until the glaze is caramelized.
  7. While the eggplants are grilling, toast the whole grain burger buns on the grill for 1-2 minutes until lightly browned.
  8. Assemble the burgers by placing the grilled eggplant on the bottom half of each bun, top with shredded lettuce, cucumber slices, radish sprouts, and green onions.
  9. Cover with the top half of the bun and serve immediately.
