- Whole grain burger buns - 2
- Cucumber - 1 small, sliced
- Shredded lettuce - 1 cup
- Radish sprouts - 1/2 cup
- Green onions - 2, chopped
- Olive oil - 1 tablespoon
- Salt - to taste
Steps
- Preheat the grill or a grill pan over medium heat.
- Slice the eggplants in half lengthwise and score the flesh in a diamond pattern, being careful not to cut through the skin.
- In a small bowl, mix miso paste, mirin, sugar, and sesame oil to create the glaze.
- Brush the cut side of the eggplants with olive oil and sprinkle with a little salt.
- Place the eggplants cut side down on the grill and cook for about 5-7 minutes until they are tender and have grill marks.
- Flip the eggplants over, brush the glaze generously on the cut side, and grill for another 3-5 minutes until the glaze is caramelized.
- While the eggplants are grilling, toast the whole grain burger buns on the grill for 1-2 minutes until lightly browned.
- Assemble the burgers by placing the grilled eggplant on the bottom half of each bun, top with shredded lettuce, cucumber slices, radish sprouts, and green onions.
- Cover with the top half of the bun and serve immediately.
