Ingredients
- Eggplant - 1 medium (about 250g)
- Olive oil - 2 tablespoons
- Miso paste - 1 tablespoon
- Soy sauce - 1 tablespoon
- Maple syrup - 1 teaspoon
- Garlic - 1 clove, minced
- Ginger - 1 teaspoon, grated
- Panko breadcrumbs - 1/2 cup
- Salt - to taste
- Black pepper - to taste
- Burger buns - 2 whole grain or sesame
- Lettuce leaves - 2 large
- Tomato - 1 medium, sliced
- Cucumber - 1/2 medium, sliced
- Avocado - 1/2, sliced
- Sesame seeds - 1 tablespoon (for garnish)
Steps
- Preheat your oven to 200°C (400°F).
- Slice the eggplant into 1.5 cm thick rounds and sprinkle with salt. Let it sit for 10 minutes to draw out moisture, then rinse and pat dry.
- In a small bowl, mix miso paste, soy sauce, maple syrup, minced garlic, and grated ginger to create a marinade.
- Brush both sides of the eggplant slices with olive oil and then coat them with the miso marinade. Place them on a baking sheet lined with parchment paper.
- Bake the eggplant in the preheated oven for about 20 minutes, flipping halfway through until they are tender and caramelized.
- Remove the eggplant from the oven and let it cool slightly. If desired, coat each slice in panko breadcrumbs for added crunch.
- In a separate pan, lightly toast the burger buns until golden.
- Assemble the burgers by placing a lettuce leaf on the bottom bun, followed by a slice of the miso-glazed eggplant, tomato, cucumber, and avocado. Sprinkle sesame seeds on top.
- Cover with the top bun and serve immediately with your favorite dipping sauce or side.
