Ingredients

  • Eggplant - 1 medium (about 250g)
  • Olive oil - 2 tablespoons
  • Miso paste - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Maple syrup - 1 teaspoon
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Panko breadcrumbs - 1/2 cup
  • Salt - to taste
  • Black pepper - to taste
  • Burger buns - 2 whole grain or sesame
  • Lettuce leaves - 2 large
  • Tomato - 1 medium, sliced
  • Cucumber - 1/2 medium, sliced
  • Avocado - 1/2, sliced
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Slice the eggplant into 1.5 cm thick rounds and sprinkle with salt. Let it sit for 10 minutes to draw out moisture, then rinse and pat dry.
  3. In a small bowl, mix miso paste, soy sauce, maple syrup, minced garlic, and grated ginger to create a marinade.
  4. Brush both sides of the eggplant slices with olive oil and then coat them with the miso marinade. Place them on a baking sheet lined with parchment paper.
  5. Bake the eggplant in the preheated oven for about 20 minutes, flipping halfway through until they are tender and caramelized.
  6. Remove the eggplant from the oven and let it cool slightly. If desired, coat each slice in panko breadcrumbs for added crunch.
  7. In a separate pan, lightly toast the burger buns until golden.
  8. Assemble the burgers by placing a lettuce leaf on the bottom bun, followed by a slice of the miso-glazed eggplant, tomato, cucumber, and avocado. Sprinkle sesame seeds on top.
  9. Cover with the top bun and serve immediately with your favorite dipping sauce or side.
