Ingredients

  • Sardines - 200 grams, cleaned and filleted
  • Sea salt - 10 grams
  • Cooked cauliflower rice - 1 cup
  • Rice vinegar - 2 tablespoons
  • Fresh ginger - 1 teaspoon, grated
  • Wasabi - 1 teaspoon
  • Sesame oil - 1 tablespoon
  • Nori sheets - 2, cut into strips
  • Cucumber - 1 small, julienned
  • Radish - 1 small, thinly sliced

Steps

  1. In a bowl, combine the sardines with sea salt and let them marinate for 10 minutes to enhance flavor.
  2. In another bowl, mix the cooked cauliflower rice with rice vinegar, grated ginger, and a splash of sesame oil to create a flavorful base.
  3. After marinating, rinse the sardines under cold water and pat them dry with a paper towel.
  4. Lay the nori sheets flat and spread a layer of the cauliflower rice mixture on each sheet.
  5. Place the sardine fillets on top of the rice, then add julienned cucumber and sliced radish for added crunch.
  6. Roll the nori sheets tightly into sushi rolls, using a bamboo mat if available, and slice them into bite-sized pieces.
