Ingredients

  • Shiratamako (sweet rice flour) - 100g
  • Water - 150ml
  • Sugar - 50g
  • Matcha powder - 1 tsp
  • Red bean paste (anko) - 50g
  • Edible flowers (for garnish) - as needed

Steps

  1. In a mixing bowl, combine the shiratamako and sugar. Gradually add water while stirring until a smooth batter forms.
  2. Divide the batter into two separate bowls. In one bowl, mix in the matcha powder until evenly combined.
  3. Prepare a steamer and line it with parchment paper. Pour the plain batter into one half of the steamer and the matcha batter into the other half.
  4. Cover and steam the batters for about 15 minutes, or until they are firm and cooked through.
  5. Remove the steamed cakes from the steamer and let them cool slightly. Cut each cake into bite-sized pieces.
  6. Take a piece of the plain cake and flatten it slightly. Place a small amount of red bean paste in the center and fold the edges over to create a filled dumpling.
  7. Repeat the process with the matcha cake. Garnish with edible flowers before serving.
