Ingredients

  • Udon noodles - 200 grams
  • Chicken breast - 150 grams, sliced
  • Shrimp - 100 grams, peeled and deveined
  • Eggs - 2 large
  • Dashi stock - 750 ml
  • Soy sauce - 30 ml
  • Mirin - 20 ml
  • Miso paste - 10 grams
  • Green onions - 2, chopped
  • Mushrooms (shiitake or enoki) - 100 grams, sliced
  • Spinach - 50 grams
  • Carrot - 1 small, julienned
  • Sesame oil - 1 teaspoon
  • Salt - to taste

Steps

  1. In a pot, bring the dashi stock to a simmer over medium heat.
  2. Add soy sauce, mirin, and miso paste to the stock, stirring until the miso dissolves.
  3. In a separate pot, boil water and cook the udon noodles according to package instructions. Drain and set aside.
  4. In the simmering broth, add the sliced chicken and cook for about 5 minutes until it starts to cook through.
  5. Add the shrimp, mushrooms, carrot, and spinach to the pot and cook for another 3-4 minutes until the shrimp is opaque and the vegetables are tender.
  6. While the broth is cooking, prepare the soft-boiled eggs by boiling them for 6-7 minutes, then transferring them to an ice bath to cool. Peel and set aside.
  7. Add the cooked udon noodles to the broth and stir gently to combine.
  8. Drizzle sesame oil over the soup and adjust seasoning with salt if needed.
  9. Serve the nabeyaki udon in bowls, topping each with a soft-boiled egg cut in half and garnishing with chopped green onions.
