  • Daikon radish - 100 grams, sliced
  • Green onions - 2 stalks, chopped
  • Dashi stock - 500 ml
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - to taste

Steps

  1. In a pot, heat the sesame oil over medium heat and add the sliced chicken. Cook until the chicken is browned and cooked through, about 5 minutes.
  2. Add the dashi stock, soy sauce, and mirin to the pot. Bring to a gentle simmer.
  3. Add the daikon radish and carrot to the pot, allowing them to simmer for about 5 minutes until slightly tender.
  4. Stir in the shiitake mushrooms, napa cabbage, and tofu cubes. Simmer for an additional 5-7 minutes until the vegetables are cooked but still crisp.
  5. Taste the broth and adjust seasoning with salt if necessary. Add the chopped green onions just before serving.
