- Shiitake mushrooms - 100 grams, sliced
- Green onions - 2, chopped
- Baby bok choy - 200 grams, halved
- Frozen shrimp - 100 grams, peeled and deveined
- Calamari rings - 100 grams
- Fish sauce (Halal) - 2 tablespoons
- Soy sauce (Halal) - 2 tablespoons
- Dashi stock - 500 ml
- Sesame oil - 1 teaspoon
- Black pepper - to taste
- Lemon wedges - for garnish
Steps
- In a pot, bring water to a boil and cook the udon noodles according to package instructions. Drain and set aside.
- In a large pot or deep skillet, heat the vegetable oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
- Add the sliced carrot and shiitake mushrooms to the pot, cooking for another 3-4 minutes until they begin to soften.
- Pour in the dashi stock, fish sauce, and soy sauce, bringing the mixture to a gentle simmer.
- Add the bok choy, shrimp, and calamari, cooking for an additional 3-4 minutes until the seafood is cooked through.
- Stir in the cooked udon noodles and sesame oil, mixing gently until everything is well combined and heated through. Season with black pepper to taste.
- Serve hot, garnished with chopped green onions and lemon wedges on the side.
