Ingredients

  • Soba noodles - 150 grams

  • Soy sauce - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable broth - 200 ml
  • Scallions - 2, chopped
  • Sesame seeds - 1 tablespoon, toasted
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Cook the soba noodles according to package instructions. Drain and set aside.
  2. In a large pan, heat sesame oil over medium heat. Add minced garlic and grated ginger, sautéing for 1-2 minutes until fragrant.
  3. Add the sliced mushrooms to the pan and cook for 5-7 minutes, stirring occasionally, until softened and golden.
  4. Pour in the vegetable broth and soy sauce, bringing the mixture to a simmer. Let it cook for an additional 5 minutes.
  5. Add the cooked soba noodles to the pan, tossing everything together until evenly coated. Season with salt and black pepper to taste.
  6. Serve hot, garnished with chopped scallions and toasted sesame seeds.
