- Sesame oil - 1 tablespoon
- Vegetable broth - 200 ml
- Scallions - 2, chopped
- Sesame seeds - 1 tablespoon, toasted

Steps
- Cook the soba noodles according to package instructions. Drain and set aside.
- In a large pan, heat sesame oil over medium heat. Add minced garlic and grated ginger, sautéing for 1-2 minutes until fragrant.
- Add the sliced mushrooms to the pan and cook for 5-7 minutes, stirring occasionally, until softened and golden.
- Pour in the vegetable broth and soy sauce, bringing the mixture to a simmer. Let it cook for an additional 5 minutes.
- Add the cooked soba noodles to the pan, tossing everything together until evenly coated. Season with salt and black pepper to taste.
- Serve hot, garnished with chopped scallions and toasted sesame seeds.
