- Soy sauce - 1 tablespoon

Steps
- Preheat the oven to 190°C (375°F).
- In a skillet, melt the butter over medium heat. Add the minced garlic and sauté until fragrant.
- Add the sliced shiitake and button mushrooms, and cook for about 5-7 minutes until softened.
- Stir in the fresh spinach and cook until wilted, about 2 minutes. Remove from heat.
- In a separate saucepan, melt 20 grams of butter over medium heat. Add the flour and whisk for 1-2 minutes to create a roux.
- Gradually add the milk while whisking continuously until the mixture thickens, about 3-5 minutes.
- Stir in the soy sauce, salt, and black pepper into the sauce.
- Combine the mushroom and spinach mixture with the sauce, mixing well to coat.
- Transfer the mixture to a baking dish and top with grated Parmesan cheese and panko breadcrumbs.
- Drizzle the olive oil over the breadcrumbs for extra crispiness.
- Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and bubbly.
- Remove from the oven, let it cool for a few minutes, then garnish with chopped green onions before serving.
