Ingredients

  • Shiitake mushrooms - 150 grams, sliced
  • Button mushrooms - 100 grams, sliced
  • Spinach - 50 grams, fresh
  • Garlic - 2 cloves, minced
  • Butter - 20 grams
  • All-purpose flour - 15 grams
  • Milk - 200 ml
  • Soy sauce - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Parmesan cheese - 30 grams, grated
  • Panko breadcrumbs - 30 grams
  • Olive oil - 1 tablespoon
  • Green onion - 1 stalk, chopped (for garnish)

Steps

  1. Preheat the oven to 190°C (375°F).
  2. In a skillet, melt the butter over medium heat. Add the minced garlic and sauté until fragrant.
  3. Add the sliced shiitake and button mushrooms, and cook for about 5-7 minutes until softened.
  4. Stir in the fresh spinach and cook until wilted, about 2 minutes. Remove from heat.
  5. In a separate saucepan, melt 20 grams of butter over medium heat. Add the flour and whisk for 1-2 minutes to create a roux.
  6. Gradually add the milk while whisking continuously until the mixture thickens, about 3-5 minutes.
  7. Stir in the soy sauce, salt, and black pepper into the sauce.
  8. Combine the mushroom and spinach mixture with the sauce, mixing well to coat.
  9. Transfer the mixture to a baking dish and top with grated Parmesan cheese and panko breadcrumbs.
  10. Drizzle the olive oil over the breadcrumbs for extra crispiness.
  11. Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and bubbly.
  12. Remove from the oven, let it cool for a few minutes, then garnish with chopped green onions before serving.
