- Goya (bitter melon) - 150 grams
- Firm tofu - 200 grams
- Shiitake mushrooms - 100 grams
- Enoki mushrooms - 100 grams
- Garlic - 2 cloves
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Vegetable oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Green onions - 2 stalks
Steps
- Slice the goya in half lengthwise, remove the seeds, and thinly slice it into half-moons.
- Press the tofu to remove excess moisture, then cut it into bite-sized cubes.
- Clean the shiitake mushrooms and slice them. Trim the enoki mushrooms and set aside.
- Heat vegetable oil in a large pan or wok over medium heat. Add the garlic, minced, and sauté until fragrant.
- Add the cubed tofu to the pan and cook until golden brown on all sides, about 6-8 minutes.
- Add the sliced goya and shiitake mushrooms to the pan, stirring occasionally, and cook for about 5 minutes until they soften.
- Stir in the enoki mushrooms and cook for an additional 2-3 minutes.
- Pour the soy sauce and sesame oil over the vegetables and tofu, mixing well. Season with salt and black pepper to taste.
- Remove from heat and garnish with chopped green onions before serving.
