Ingredients

  • Shiitake mushrooms - 200 grams, finely chopped
  • Goya (bitter melon) - 100 grams, thinly sliced and seeds removed
  • Breadcrumbs - 50 grams
  • Firm tofu - 100 grams, crumbled
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Green onion - 2 stalks, chopped
  • Garlic - 1 clove, minced
  • Egg - 1, beaten
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Burger buns - 2
  • Miso paste - 1 tablespoon
  • Mayonnaise - 2 tablespoons
  • Lettuce leaves - 2
  • Tomato - 1, sliced

Steps

  1. In a skillet, heat sesame oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  2. Add the chopped shiitake mushrooms and goya slices to the skillet. Cook for 5-7 minutes until the mushrooms are tender and the goya is slightly softened.
  3. In a mixing bowl, combine the cooked mushroom and goya mixture with crumbled tofu, breadcrumbs, soy sauce, beaten egg, chopped green onion, salt, and black pepper. Mix until well combined.
  4. Shape the mixture into two patties and refrigerate for 10 minutes to firm up.
  5. While the patties are chilling, prepare the miso mayo by mixing miso paste and mayonnaise in a small bowl until smooth.
  6. Heat a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown and heated through.
  7. Toast the burger buns lightly in the same skillet for 1-2 minutes.
  8. Assemble the burgers by spreading miso mayo on the bottom bun, adding a lettuce leaf, the mushroom goya patty, and a slice of tomato. Top with the other half of the bun and serve.
