Ingredients
- Short-grain Japanese rice - 1 cup (200g)
- Water - 1 1/4 cups (300ml)
- Mixed mushrooms (shiitake, enoki, and button) - 200g, sliced
- Onion - 1 medium (about 100g), finely chopped
- Soy sauce - 2 tablespoons (30ml)
- Mirin - 1 tablespoon (15ml)
- Sesame oil - 1 tablespoon (15ml)
- Green onions - 2 stalks, chopped (for garnish)
- Salt - to taste
Steps
- Rinse the short-grain rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a medium pot, heat the sesame oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the sliced mushrooms to the pot and continue to sauté for another 5-7 minutes until they are softened.
- Drain the soaked rice and add it to the pot with the sautéed onions and mushrooms. Stir to combine.
- Pour in the water, soy sauce, mirin, and a pinch of salt. Stir gently, then bring to a boil over high heat.
- Once boiling, reduce the heat to low, cover the pot with a lid, and simmer for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
- Remove the pot from heat and let it rest, covered, for 10 minutes to allow the rice to steam.
- Fluff the rice with a fork and serve hot, garnished with chopped green onions.
