Ingredients

  • Shiitake mushrooms - 200 grams
  • Miso paste - 3 tablespoons
  • Mirin - 1 tablespoon
  • Sugar - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Green onions - 2 stalks, chopped
  • Sesame seeds - 1 tablespoon, toasted
  • Cooking oil - 1 tablespoon

Steps

  1. Preheat your grill or a grill pan over medium heat.
  2. Clean the shiitake mushrooms with a damp cloth and remove the stems.
  3. In a bowl, mix together the miso paste, mirin, sugar, soy sauce, and sesame oil until smooth to create the glaze.
  4. Brush the mushrooms with a little cooking oil and place them on the grill, gill side up.
  5. Grill the mushrooms for about 5 minutes, then carefully flip them over.
  6. Using a brush, generously apply the miso glaze to the gill side of the mushrooms.
  7. Continue grilling for another 5-7 minutes, or until the mushrooms are tender and the glaze is caramelized.
  8. Remove the mushrooms from the grill and sprinkle with chopped green onions and toasted sesame seeds before serving.
