- Shiitake mushrooms - 200 grams
- Miso paste - 3 tablespoons
- Mirin - 1 tablespoon
- Sugar - 1 tablespoon
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Green onions - 2 stalks, chopped
- Sesame seeds - 1 tablespoon, toasted
- Cooking oil - 1 tablespoon
Steps
- Preheat your grill or a grill pan over medium heat.
- Clean the shiitake mushrooms with a damp cloth and remove the stems.
- In a bowl, mix together the miso paste, mirin, sugar, soy sauce, and sesame oil until smooth to create the glaze.
- Brush the mushrooms with a little cooking oil and place them on the grill, gill side up.
- Grill the mushrooms for about 5 minutes, then carefully flip them over.
- Using a brush, generously apply the miso glaze to the gill side of the mushrooms.
- Continue grilling for another 5-7 minutes, or until the mushrooms are tender and the glaze is caramelized.
- Remove the mushrooms from the grill and sprinkle with chopped green onions and toasted sesame seeds before serving.
