Ingredients

  • Pizza dough - 200 grams
  • Dashi broth - 200 ml
  • Mushrooms (shiitake, oyster, or cremini) - 150 grams, sliced
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Spring onions - 2, chopped
  • Nutritional yeast - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Sea salt - to taste
  • Black pepper - to taste
  • Fresh basil or shiso leaves - for garnish

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a pan, heat the olive oil over medium heat and sauté the minced garlic until fragrant.
  3. Add the sliced mushrooms to the pan, season with soy sauce, salt, and pepper, and cook until the mushrooms are tender, about 5-7 minutes.
  4. Pour in the dashi broth and let it simmer for another 2-3 minutes until slightly reduced.
  5. Roll out the pizza dough on a floured surface to your desired thickness and shape.
  6. Transfer the rolled dough to a baking sheet lined with parchment paper.
  7. Spread the mushroom dashi mixture evenly over the pizza dough, leaving a small border around the edges.
  8. Sprinkle nutritional yeast and chopped spring onions over the top.
  9. Bake the pizza in the preheated oven for 12-15 minutes, or until the crust is golden brown.
  10. Remove from the oven and let it cool slightly before garnishing with fresh basil or shiso leaves.
  11. Slice and serve warm.
