  • Vanilla extract - 1 teaspoon
  • Cornstarch - 1 tablespoon

Steps

  1. In a mixing bowl, combine glutinous rice flour, sugar, baking powder, and salt.
  2. In a separate bowl, whisk together coconut milk, vegetable oil, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and mix until smooth and well combined.
  4. Preheat the waffle maker according to the manufacturer's instructions.
  5. Lightly grease the waffle maker with cooking spray or a little oil.
  6. Pour about 1/2 cup of the mochi batter into the preheated waffle maker, close the lid, and cook for about 5-7 minutes, or until golden brown and crispy.
