Ingredients

  • Sweet rice flour (mochi flour) - 100 grams
  • Water - 120 ml
  • Sugar - 30 grams
  • Dark chocolate (70% cacao) - 100 grams
  • Cocoa powder - 30 grams
  • Cornstarch - 20 grams
  • Matcha powder (optional) - 1 teaspoon

Steps

  1. In a microwave-safe bowl, combine sweet rice flour, sugar, and water. Mix well until smooth.
  2. Cover the bowl with plastic wrap and microwave on high for 1 minute. Stir the mixture, cover again, and microwave for another 1-2 minutes until the mixture becomes sticky and translucent.
  3. Dust a clean surface with cornstarch. Transfer the mochi mixture onto the surface and let it cool slightly until you can handle it.
  4. Divide the mochi into small pieces (about 20 grams each) and flatten them into discs.
  5. Melt the dark chocolate in a microwave or double boiler until smooth. Let it cool slightly.
  6. Place a small amount of melted chocolate in the center of each mochi disc, then fold the edges over to seal the chocolate inside. Roll the filled mochi into a ball shape.
  7. Roll each mochi truffle in cocoa powder or matcha powder to coat them. Place them on a plate.
  8. Refrigerate the mochi truffles for at least 10 minutes to set before serving.
