- Sweet rice flour (mochi flour) - 100 grams
- Water - 120 ml
- Sugar - 30 grams
- Dark chocolate (70% cacao) - 100 grams
- Cocoa powder - 30 grams
- Cornstarch - 20 grams
- Matcha powder (optional) - 1 teaspoon
Steps
- In a microwave-safe bowl, combine sweet rice flour, sugar, and water. Mix well until smooth.
- Cover the bowl with plastic wrap and microwave on high for 1 minute. Stir the mixture, cover again, and microwave for another 1-2 minutes until the mixture becomes sticky and translucent.
- Dust a clean surface with cornstarch. Transfer the mochi mixture onto the surface and let it cool slightly until you can handle it.
- Divide the mochi into small pieces (about 20 grams each) and flatten them into discs.
- Melt the dark chocolate in a microwave or double boiler until smooth. Let it cool slightly.
- Place a small amount of melted chocolate in the center of each mochi disc, then fold the edges over to seal the chocolate inside. Roll the filled mochi into a ball shape.
- Roll each mochi truffle in cocoa powder or matcha powder to coat them. Place them on a plate.
- Refrigerate the mochi truffles for at least 10 minutes to set before serving.
