Ingredients

  • Glutinous rice flour - 100g
  • Water - 150ml
  • Protein powder (vanilla flavor) - 30g
  • Mascarpone cheese - 100g
  • Greek yogurt - 50g
  • Espresso or strong brewed coffee - 50ml
  • Cocoa powder - 10g
  • Honey - 15g
  • Vanilla extract - 1 tsp
  • Pinch of salt - 1

Steps

  1. In a bowl, combine the glutinous rice flour, water, and a pinch of salt. Mix until smooth.
  2. Transfer the mixture to a microwave-safe dish and cover with plastic wrap. Microwave on high for 1 minute, stir, then microwave for another 1-2 minutes until it becomes a sticky dough.
  3. Allow the mochi to cool slightly, then dust your hands with cornstarch and knead the mochi until smooth. Divide into two equal pieces and flatten them into discs.
  4. In another bowl, mix the mascarpone cheese, Greek yogurt, honey, protein powder, espresso, and vanilla extract until smooth and creamy.
  5. Place a layer of the mascarpone mixture on top of one mochi disc, then cover with the second disc. Repeat for the second serving.
  6. Dust the tops with cocoa powder and refrigerate for at least 15 minutes before serving to firm up.
