- Glutinous rice flour - 100g
- Water - 150ml
- Protein powder (vanilla flavor) - 30g
- Mascarpone cheese - 100g
- Greek yogurt - 50g
- Espresso or strong brewed coffee - 50ml
- Cocoa powder - 10g
- Honey - 15g
- Vanilla extract - 1 tsp
- Pinch of salt - 1
Steps
- In a bowl, combine the glutinous rice flour, water, and a pinch of salt. Mix until smooth.
- Transfer the mixture to a microwave-safe dish and cover with plastic wrap. Microwave on high for 1 minute, stir, then microwave for another 1-2 minutes until it becomes a sticky dough.
- Allow the mochi to cool slightly, then dust your hands with cornstarch and knead the mochi until smooth. Divide into two equal pieces and flatten them into discs.
- In another bowl, mix the mascarpone cheese, Greek yogurt, honey, protein powder, espresso, and vanilla extract until smooth and creamy.
- Place a layer of the mascarpone mixture on top of one mochi disc, then cover with the second disc. Repeat for the second serving.
- Dust the tops with cocoa powder and refrigerate for at least 15 minutes before serving to firm up.
