  • Cornstarch - 30 grams (for dusting)
  • Egg yolks - 2
  • Milk - 150 ml
  • Matcha powder - 2 teaspoons
  • Vanilla extract - 1 teaspoon
  • Butter - 20 grams
  • Fresh strawberries - 4 (for garnish)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the sweet rice flour and granulated sugar. Gradually add water while stirring until a smooth batter forms.
  3. Pour the mixture into a greased tart pan and spread evenly. Bake for 15 minutes or until set and slightly golden.
  4. In a saucepan, whisk together egg yolks, milk, matcha powder, and vanilla extract over low heat until thickened, about 5-7 minutes. Stir constantly to avoid curdling.
  5. Remove the tart crust from the oven and let it cool for a few minutes.
  6. Pour the matcha custard into the cooled mochi tart crust and smooth the top with a spatula.
  7. Return the tart to the oven and bake for an additional 10 minutes to firm up the custard.
  8. Remove from the oven and let cool completely at room temperature.
  9. Once cooled, refrigerate for at least 30 minutes before serving.
  10. Garnish with fresh strawberries before serving.
