Ingredients

  • Sweet rice flour (mochi flour) - 100 grams
  • Granulated sugar - 50 grams
  • Water - 120 ml
  • Coconut milk - 100 ml
  • Matcha powder - 1 teaspoon
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch
  • Cornstarch - 1 tablespoon (for dusting)
  • Fresh fruit for topping (e.g., strawberries or blueberries) - 50 grams

Steps

  1. In a mixing bowl, combine the sweet rice flour, granulated sugar, and a pinch of salt.
  2. Gradually add water to the dry ingredients while stirring until you have a smooth batter.
  3. Pour the batter into a microwave-safe dish and cover it with plastic wrap.
  4. Microwave on high for 2 minutes, then stir. Repeat this process until the mixture becomes thick and sticky, about 6-8 minutes total.
  5. Once cooked, let the mochi cool slightly, then transfer it to a clean surface dusted with cornstarch.
  6. Knead the mochi gently for a minute, then press it into a tart pan to form the crust, ensuring even coverage on the bottom and sides.
  7. In a separate bowl, mix the coconut milk, matcha powder, vanilla extract, and a bit of sugar (optional) until smooth.
  8. Pour the matcha filling into the mochi crust and spread it evenly.
  9. Chill the tart in the refrigerator for at least 30 minutes to set.
  10. Top with fresh fruit just before serving, slice, and enjoy your Mochi Tart!
