- Sweet rice flour (mochi flour) - 50g
- Granulated sugar - 30g
- Eggs - 2 large, separated
- Milk - 100ml
- Vanilla extract - 1 teaspoon
- Baking powder - 1/2 teaspoon
- Butter - 10g, melted
- Matcha powder - for dusting
Steps
- Preheat the oven to 180°C (350°F) and prepare two ramekins by greasing them with a little butter.
- In a medium bowl, mix the sweet rice flour, baking powder, and granulated sugar together.
- In another bowl, whisk the egg yolks, milk, melted butter, and vanilla extract until smooth.
- Gradually add the wet ingredients to the dry ingredients, stirring until fully combined.
- In a clean bowl, beat the egg whites until soft peaks form, then gently fold them into the mochi batter until no white streaks remain.
- Pour the batter evenly into the prepared ramekins, filling them about 3/4 full.
- Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins (water bath).
- Bake in the preheated oven for 20-25 minutes, or until the soufflés are puffed and lightly golden.
- Remove from the oven and carefully lift the ramekins out of the water bath. Let cool slightly before dusting with matcha powder.
- Serve warm and enjoy your Mochi Soufflé!
