Ingredients

  • Sweet rice flour (mochi flour) - 50g
  • Granulated sugar - 30g
  • Eggs - 2 large, separated
  • Milk - 100ml
  • Vanilla extract - 1 teaspoon
  • Baking powder - 1/2 teaspoon
  • Butter - 10g, melted
  • Matcha powder - for dusting

Steps

  1. Preheat the oven to 180°C (350°F) and prepare two ramekins by greasing them with a little butter.
  2. In a medium bowl, mix the sweet rice flour, baking powder, and granulated sugar together.
  3. In another bowl, whisk the egg yolks, milk, melted butter, and vanilla extract until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until fully combined.
  5. In a clean bowl, beat the egg whites until soft peaks form, then gently fold them into the mochi batter until no white streaks remain.
  6. Pour the batter evenly into the prepared ramekins, filling them about 3/4 full.
  7. Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins (water bath).
  8. Bake in the preheated oven for 20-25 minutes, or until the soufflés are puffed and lightly golden.
  9. Remove from the oven and carefully lift the ramekins out of the water bath. Let cool slightly before dusting with matcha powder.
  10. Serve warm and enjoy your Mochi Soufflé!
