Steps

  1. In a mixing bowl, combine the glutinous rice flour, sugar, and salt.
  2. Gradually add water to the dry ingredients, mixing until smooth.
  3. Transfer the mixture to a heatproof dish and steam for 20 minutes until it becomes translucent.
  4. Once cooked, let it cool slightly before kneading until smooth and elastic.
  5. Roll the mochi into small balls or discs and set aside.
  6. In a separate bowl, mix the fruit puree with coconut milk until well combined.
  7. Pour the fruit mixture into a shallow dish and freeze for about 30 minutes until it begins to set.
  8. Stir the mixture every 10 minutes for the first 30 minutes to achieve a smoother texture.
  9. To serve, scoop the fruit sorbet into bowls and top with the mochi pieces.
