Ingredients

  • Glutinous rice flour - 100 grams
  • Baking powder - 5 grams
  • Matcha powder - 5 grams
  • Granulated sugar - 30 grams
  • Milk - 60 ml
  • Vegetable oil - 20 ml
  • Sweet red bean paste - 50 grams
  • Salt - a pinch

Steps

  1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine glutinous rice flour, baking powder, matcha powder, sugar, and a pinch of salt, and mix well.
  3. In a separate bowl, whisk together the milk and vegetable oil until combined.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
  5. Divide the dough into two equal portions and flatten each portion into a disc about 1.5 cm thick.
  6. Place a spoonful of sweet red bean paste in the center of one disc, then cover it with the other disc, sealing the edges.
  7. Transfer the scone to the prepared baking sheet and repeat with the second portion of dough.
  8. Bake for 15-20 minutes, or until the scones are lightly golden brown.
  9. Remove from the oven and let cool slightly before serving.
