Ingredients

  • Mochiko (sweet rice flour) - 150g
  • Water - 180ml
  • Shredded mozzarella cheese - 150g
  • Pizza sauce - 100g
  • Sliced bell peppers - 50g
  • Sliced mushrooms - 50g
  • Olive oil - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a mixing bowl, combine mochiko, water, salt, and black pepper until smooth.
  3. Pour the mochi mixture into a greased, round cake pan (about 20cm in diameter) and spread evenly.
  4. Bake in the preheated oven for 15-20 minutes, or until the edges are lightly golden and the center is set.
  5. Remove the mochi crust from the oven and spread pizza sauce evenly over the surface.
  6. Sprinkle shredded mozzarella cheese on top, followed by bell peppers and mushrooms.
  7. Drizzle with olive oil and sprinkle dried oregano over the toppings.
  8. Return the pizza to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven, let cool for a couple of minutes, slice, and serve warm.
