- Sweet rice flour (Mochiko) - 100 grams
- Water - 80 milliliters
- Sugar - 30 grams
- Red bean paste - 100 grams
- Cornstarch - for dusting
- Vanilla extract - 1 teaspoon
- Vegetable oil - for greasing
Steps
- In a mixing bowl, combine sweet rice flour, sugar, and water. Stir until smooth.
- Transfer the mixture to a microwave-safe bowl and cover it with a damp cloth. Microwave on high for 1 minute.
- Stir the mixture, cover again, and microwave for an additional 1 minute. Repeat this process until the mixture becomes thick and slightly translucent, about 3-4 minutes total.
- Dust a clean surface with cornstarch and turn the mochi out onto it. Let it cool slightly.
- Divide the mochi into two equal portions and flatten each into a circle about 1/4 inch thick.
- Place 50 grams of red bean paste in the center of each mochi circle. Fold the edges over to create a pie shape and pinch to seal.
- Grease a frying pan with vegetable oil and heat over medium heat. Cook each mochi pie for about 2-3 minutes on each side until lightly golden.
- Remove from pan and let cool slightly before serving.
