Ingredients

  • Sweet rice flour (Mochiko) - 100 grams
  • Water - 80 milliliters
  • Sugar - 30 grams
  • Red bean paste - 100 grams
  • Cornstarch - for dusting
  • Vanilla extract - 1 teaspoon
  • Vegetable oil - for greasing

Steps

  1. In a mixing bowl, combine sweet rice flour, sugar, and water. Stir until smooth.
  2. Transfer the mixture to a microwave-safe bowl and cover it with a damp cloth. Microwave on high for 1 minute.
  3. Stir the mixture, cover again, and microwave for an additional 1 minute. Repeat this process until the mixture becomes thick and slightly translucent, about 3-4 minutes total.
  4. Dust a clean surface with cornstarch and turn the mochi out onto it. Let it cool slightly.
  5. Divide the mochi into two equal portions and flatten each into a circle about 1/4 inch thick.
  6. Place 50 grams of red bean paste in the center of each mochi circle. Fold the edges over to create a pie shape and pinch to seal.
  7. Grease a frying pan with vegetable oil and heat over medium heat. Cook each mochi pie for about 2-3 minutes on each side until lightly golden.
  8. Remove from pan and let cool slightly before serving.
