Ingredients

  • Matcha powder - 1 tablespoon
  • Greek yogurt - 200 grams
  • Honey or maple syrup - 2 tablespoons
  • Assorted fresh fruits (strawberries, kiwi, mango) - 150 grams
  • Red bean paste (optional) - 50 grams

Steps

  1. In a microwave-safe bowl, mix the sweet rice flour, water, and sugar until smooth.
  2. Cover the bowl with plastic wrap and microwave on high for 1 minute; stir, then microwave for an additional 1 minute until the mixture becomes sticky and translucent.
  3. Dust a clean surface with cornstarch and transfer the mochi dough onto it. Allow it to cool slightly before kneading it with cornstarch to prevent sticking.
  4. Divide the mochi into small pieces (about 10-12 grams each) and shape them into small balls or discs. Set aside.
  5. In another bowl, mix the Greek yogurt with matcha powder and honey or maple syrup until well combined and smooth.
  6. Prepare serving glasses or bowls by layering ingredients: start with a layer of matcha yogurt, followed by a layer of fresh fruits, then add a layer of mochi pieces.
  7. Repeat the layering process until the glasses are filled, finishing with a final layer of fruits on top.
  8. If desired, add a dollop of red bean paste on top for added sweetness and texture.
