- Honey or maple syrup - 2 tablespoons
- Assorted fresh fruits (strawberries, kiwi, mango) - 150 grams
- Red bean paste (optional) - 50 grams
Steps
- In a microwave-safe bowl, mix the sweet rice flour, water, and sugar until smooth.
- Cover the bowl with plastic wrap and microwave on high for 1 minute; stir, then microwave for an additional 1 minute until the mixture becomes sticky and translucent.
- Dust a clean surface with cornstarch and transfer the mochi dough onto it. Allow it to cool slightly before kneading it with cornstarch to prevent sticking.
- Divide the mochi into small pieces (about 10-12 grams each) and shape them into small balls or discs. Set aside.
- In another bowl, mix the Greek yogurt with matcha powder and honey or maple syrup until well combined and smooth.
- Prepare serving glasses or bowls by layering ingredients: start with a layer of matcha yogurt, followed by a layer of fresh fruits, then add a layer of mochi pieces.
- Repeat the layering process until the glasses are filled, finishing with a final layer of fruits on top.
- If desired, add a dollop of red bean paste on top for added sweetness and texture.
