Ingredients

  • Sweet rice flour - 100 grams
  • Granulated sugar - 50 grams
  • Baking powder - 1 teaspoon
  • Milk - 100 milliliters
  • Vegetable oil - 2 tablespoons
  • Matcha powder - 1 teaspoon
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch

Steps

  1. Preheat the oven to 180°C (350°F) and line a muffin tin with paper liners.
  2. In a mixing bowl, combine the sweet rice flour, granulated sugar, baking powder, matcha powder, and salt.
  3. In another bowl, whisk together the milk, vegetable oil, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined; do not overmix.
  5. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  6. Bake in the preheated oven for 20-25 minutes or until a toothpick inserted in the center comes out clean.
