  • Water - 100 ml
  • Cornstarch - 2 teaspoons
  • Salt - a pinch
  • Fresh fruit (for garnish) - as desired

Steps

  1. In a saucepan, combine Mochiko, granulated sugar, and a pinch of salt. Gradually add water while stirring until smooth.
  2. Cook the mixture over low heat, stirring continuously until it thickens and becomes glossy, about 5-7 minutes. Remove from heat and let it cool slightly.
  3. In a blender, combine silken tofu, coconut milk, matcha powder, and vanilla extract. Blend until smooth and creamy.
  4. Fold the cooled mochi mixture into the matcha mousse until well combined. Be gentle to maintain the airiness of the mousse.
  5. Spoon the mixture into serving dishes and refrigerate for at least 2 hours to set.
