- Sweet rice flour (mochi flour) - 100 grams
- Water - 150 ml
- Honey or maple syrup - 2 tablespoons
- Vanilla extract - 1 teaspoon
- Low-fat ice cream (any flavor) - 200 grams
- Cornstarch (for dusting) - 2 tablespoons
Steps
- In a microwave-safe bowl, combine sweet rice flour, water, honey (or maple syrup), and vanilla extract. Mix until smooth.
- Cover the bowl with plastic wrap and microwave on high for 1 minute. Stir the mixture, then microwave for another minute. Repeat this process until the mixture becomes sticky and translucent (about 3 minutes total).
- Dust a clean surface with cornstarch and carefully transfer the mochi mixture onto it. Allow it to cool slightly.
- Once cool enough to handle, knead the mochi gently to form a smooth dough. Divide the dough into 4 equal pieces.
- Flatten each piece of mochi into a circle about 1/4 inch thick. Place a small scoop of low-fat ice cream in the center of each circle.
- Wrap the mochi around the ice cream, pinching the edges to seal it completely. Roll the mochi ball between your palms to smooth it out.
- Repeat with the remaining pieces. Once all mochi balls are formed, place them on a plate and freeze for at least 2 hours before serving.
