Ingredients
- Glutinous rice flour - 100 grams
- Water - 200 milliliters
- Sugar - 50 grams
- Matcha powder - 2 teaspoons
- Red bean paste - 100 grams
- Salt - a pinch
- Cornstarch - for dusting
- Lemon juice - 1 tablespoon
Steps
- In a bowl, mix glutinous rice flour, water, sugar, and salt until smooth to create the mochi mixture.
- Pour the mixture into a microwave-safe dish and cover loosely with plastic wrap. Microwave on high for 2 minutes, remove, stir, and microwave again for another 2 minutes until the mixture becomes translucent.
- Dust a clean surface with cornstarch, then pour the mochi mixture onto it. Let it cool for a few minutes, then knead gently and flatten it into a rectangular shape about 1 cm thick.
- Cut the mochi into small squares or circles and set aside.
- In another bowl, mix the remaining water, matcha powder, and lemon juice to create the granita base.
- Pour the matcha mixture into a shallow dish and freeze for about 1 hour, then scrape the surface with a fork to create a granita texture. Repeat freezing and scraping every 30 minutes until the granita is fluffy and icy.
- To serve, place the mochi pieces in a bowl and top with the matcha granita. Add dollops of red bean paste on top for sweetness.
