  • Green onions - 2, chopped
  • Sesame oil - 1 tablespoon
  • Sea salt - to taste
  • Water - 200 milliliters

Steps

  1. In a large skillet, heat the sesame oil over medium heat.
  2. Add the sliced shiitake mushrooms and grated carrot, sautéing for about 5 minutes until softened.
  3. Stir in the cauliflower rice and cook for another 5 minutes, allowing it to absorb the flavors.
  4. In a small bowl, combine the coconut aminos, miso paste, and water, mixing until smooth.
  5. Pour the mixture over the cauliflower rice, stirring well to combine all ingredients.
  6. Season with sea salt to taste and let it simmer for another 10 minutes, stirring occasionally.
  7. Once cooked, remove from heat and fold in the chopped green onions.
  8. Serve warm, garnished with additional green onions if desired.
