  • Dark chocolate (70% cocoa) - 50 grams
  • Coconut oil - 10 grams
  • Cornstarch - for dusting

Steps

  1. In a medium bowl, mix the glutinous rice flour, cocoa powder, and granulated sugar together until well combined.
  2. Gradually add water to the dry ingredients, stirring until the mixture is smooth and free of lumps.
  3. Transfer the mixture to a microwave-safe bowl and cover it with a damp cloth or microwave-safe lid.
  4. Microwave on high for 1 minute, then stir. Repeat this process for another 1-2 minutes until the mixture becomes thick and sticky.
  5. While the mochi is cooking, melt the dark chocolate and coconut oil together in a small saucepan over low heat, stirring until smooth.
  6. Once the mochi is cooked, let it cool slightly, then dust a clean surface with cornstarch.
  7. Transfer the mochi onto the dusted surface and flatten it out with your hands until about 1 cm thick.
  8. Cut the mochi into small squares or rectangles and dip each piece into the melted chocolate mixture, ensuring they are well coated.
  9. Place the chocolate-coated mochi on a parchment-lined plate and refrigerate for about 10-15 minutes to allow the chocolate to set.
