- Sweet rice flour (mochi flour) - 100 grams
- Granulated sugar - 30 grams
- Baking powder - 1 teaspoon
- Water - 120 milliliters
- Matcha powder - 1 teaspoon
- Vegetable oil (for frying) - 250 milliliters
- Sweet red bean paste - 50 grams
- Cornstarch (for dusting) - 2 tablespoons
- Honey or maple syrup (for drizzling) - 2 tablespoons
Steps
- In a mixing bowl, combine sweet rice flour, granulated sugar, baking powder, and matcha powder.
- Gradually add water to the dry ingredients, stirring until you achieve a smooth batter.
- Heat the vegetable oil in a deep pan over medium heat until it reaches 180°C (350°F).
- Dust your hands with cornstarch to prevent sticking. Take a tablespoon of the batter and flatten it slightly in your palm.
- Place a small amount (about 1 teaspoon) of sweet red bean paste in the center of the flattened batter and fold the edges over to seal it, forming a ball.
- Carefully drop the fritters into the hot oil, frying a few at a time to avoid overcrowding. Fry for about 3-4 minutes or until golden brown.
- Remove the fritters from the oil and drain on paper towels to absorb excess oil.
- Serve warm, drizzled with honey or maple syrup.
