- Glutinous rice flour - 100 grams
- Water - 120 milliliters
- Sugar - 30 grams
- Cornstarch - 20 grams (for dusting)
- Red bean paste (anko) - 100 grams
- Sesame seeds (optional) - 1 tablespoon
Steps
- In a mixing bowl, combine glutinous rice flour, sugar, and water. Stir until smooth and well combined.
- Transfer the mixture to a microwave-safe bowl and cover it with plastic wrap, leaving a small opening for steam to escape.
- Microwave on high for 1 minute, then stir. Repeat this process for a total of 3 minutes, stirring after each minute until the mixture becomes a sticky, translucent dough.
- Dust a clean surface with cornstarch to prevent sticking. Once the dough is cool enough to handle, transfer it to the dusted surface.
- Divide the dough into 4 equal pieces. Flatten each piece into a circle about 8 cm in diameter.
- Place a spoonful of red bean paste in the center of each circle, then carefully fold the edges over to seal the filling inside, shaping it into a ball.
- Dust each filled mochi with more cornstarch to prevent sticking, then optionally sprinkle with sesame seeds for added texture.
- Serve immediately or refrigerate for 30 minutes before enjoying.
