  • Sweet rice flour (mochi flour) - 100 grams
  • Granulated sugar - 50 grams
  • Baking powder - 1 teaspoon
  • Coconut milk - 120 milliliters
  • Vanilla extract - 1 teaspoon
  • Cornstarch - 1 tablespoon
  • Salt - a pinch
  • Red bean paste - 50 grams (for filling)
  • Powdered sugar - for dusting (optional)

Steps

  1. Preheat the oven to 180°C (350°F) and line a muffin tray with 2 cupcake liners.
  2. In a mixing bowl, combine the sweet rice flour, granulated sugar, baking powder, cornstarch, and salt.
  3. In a separate bowl, whisk together the coconut milk and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until a smooth batter forms.
  5. Spoon a small amount of batter into each cupcake liner, filling them about one-third full.
  6. Add a teaspoon of red bean paste in the center of each cupcake liner, then cover with more batter until they are about two-thirds full.
  7. Bake in the preheated oven for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow to cool for a few minutes before transferring to a wire rack.
  9. Dust with powdered sugar if desired before serving.
