Steps
- Preheat the oven to 180°C (350°F) and line a muffin tray with 2 cupcake liners.
- In a mixing bowl, combine the sweet rice flour, granulated sugar, baking powder, cornstarch, and salt.
- In a separate bowl, whisk together the coconut milk and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and mix until a smooth batter forms.
- Spoon a small amount of batter into each cupcake liner, filling them about one-third full.
- Add a teaspoon of red bean paste in the center of each cupcake liner, then cover with more batter until they are about two-thirds full.
- Bake in the preheated oven for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
