  • Tomato sauce - 1/2 cup (120ml)
  • Shredded mozzarella cheese - 1 cup (100g)
  • Sliced bell peppers - 1/2 cup (75g)
  • Sliced mushrooms - 1/2 cup (75g)
  • Fresh basil leaves - 1/4 cup (10g)
  • Black olives - 1/4 cup (30g)

Steps

  1. In a medium bowl, mix the sweet rice flour, sugar, and salt together until well combined.
  2. Gradually add water to the flour mixture, stirring until a smooth batter forms.
  3. Transfer the batter to a microwave-safe dish and cover it with plastic wrap, leaving a small vent for steam to escape.
  4. Microwave on high for 2 minutes, then stir the mixture, and continue microwaving in 1-minute intervals until the mixture is thick and sticky (about 4-6 minutes total).
  5. Once cooked, let the mochi cool slightly before greasing a pizza pan with olive oil.
  6. Spread the mochi batter evenly onto the prepared pizza pan, shaping it into a crust.
  7. Preheat your oven to 220°C (425°F).
  8. Spread the tomato sauce evenly over the mochi crust, followed by the shredded mozzarella cheese.
  9. Top with sliced bell peppers, mushrooms, black olives, and fresh basil leaves.
  10. Bake in the preheated oven for 15-20 minutes, or until the cheese is bubbly and slightly golden.
