- Sweet rice flour (mochi flour) - 100 grams
- Water - 120 milliliters
- Sugar - 30 grams
- Red bean paste - 50 grams
- Cornstarch - for dusting - 20 grams
Steps
- In a mixing bowl, combine the sweet rice flour and sugar.
- Gradually add the water to the mixture, stirring until smooth.
- Transfer the mixture to a microwave-safe bowl and cover it with plastic wrap.
- Microwave on high for 1 minute, then stir the mixture. Repeat this process two more times for a total of 3 minutes.
- Once cooked, let it cool slightly, then dust your work surface with cornstarch.
- Transfer the mochi dough onto the dusted surface and flatten it with your hands or a rolling pin to about 1 cm thickness.
- Cut the mochi into small squares or circles using a knife or cookie cutter.
- Take a piece of mochi and place about 1 tablespoon of red bean paste in the center, then fold the edges over to seal it. Repeat with the remaining pieces.
- Dust the finished mochi lightly with cornstarch to prevent sticking, then serve.
