Ingredients

  • Sweet rice flour (mochi flour) - 100 grams
  • Water - 120 milliliters
  • Sugar - 30 grams
  • Red bean paste - 50 grams
  • Cornstarch - for dusting - 20 grams

Steps

  1. In a mixing bowl, combine the sweet rice flour and sugar.
  2. Gradually add the water to the mixture, stirring until smooth.
  3. Transfer the mixture to a microwave-safe bowl and cover it with plastic wrap.
  4. Microwave on high for 1 minute, then stir the mixture. Repeat this process two more times for a total of 3 minutes.
  5. Once cooked, let it cool slightly, then dust your work surface with cornstarch.
  6. Transfer the mochi dough onto the dusted surface and flatten it with your hands or a rolling pin to about 1 cm thickness.
  7. Cut the mochi into small squares or circles using a knife or cookie cutter.
  8. Take a piece of mochi and place about 1 tablespoon of red bean paste in the center, then fold the edges over to seal it. Repeat with the remaining pieces.
  9. Dust the finished mochi lightly with cornstarch to prevent sticking, then serve.
