Mizuyokan
Mizuyokan is a refreshing and subtly sweet Japanese dessert made from agar-agar and red bean paste, perfect for a light finish to a meal. This vegan version retains the traditional flavors while being completely plant-based.

Ingredients
- Agar-agar powder - 4 grams
- Water - 400 ml
- Koshian (smooth red bean paste) - 100 grams
- Maple syrup - 2 tablespoons
- Vanilla extract - 1 teaspoon
- Salt - a pinch
Steps
- In a small saucepan, combine 400 ml of water and 4 grams of agar-agar powder. Stir well to dissolve the agar-agar completely.
- Bring the mixture to a boil over medium heat, stirring frequently. Once boiling, reduce the heat and let it simmer for 5 minutes.
- Add 100 grams of koshian, 2 tablespoons of maple syrup, and a pinch of salt to the saucepan. Stir until the ingredients are fully incorporated and the mixture is smooth.
- Remove the saucepan from heat and add 1 teaspoon of vanilla extract, stirring to combine.
- Pour the mixture into a mold or two small serving cups. Allow it to cool at room temperature for about 10 minutes.
- Once cooled, refrigerate for at least 20 minutes or until set completely.
- To serve, gently unmold the Mizuyokan and cut it into slices, or serve directly in the cups. Enjoy chilled.
