Mizuyokan

Mizuyokan is a refreshing and subtly sweet Japanese dessert made from agar-agar and red bean paste, perfect for a light finish to a meal. This vegan version retains the traditional flavors while being completely plant-based.

Ingredients

  • Agar-agar powder - 4 grams
  • Water - 400 ml
  • Koshian (smooth red bean paste) - 100 grams
  • Maple syrup - 2 tablespoons
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch

Steps

  1. In a small saucepan, combine 400 ml of water and 4 grams of agar-agar powder. Stir well to dissolve the agar-agar completely.
  2. Bring the mixture to a boil over medium heat, stirring frequently. Once boiling, reduce the heat and let it simmer for 5 minutes.
  3. Add 100 grams of koshian, 2 tablespoons of maple syrup, and a pinch of salt to the saucepan. Stir until the ingredients are fully incorporated and the mixture is smooth.
  4. Remove the saucepan from heat and add 1 teaspoon of vanilla extract, stirring to combine.
  5. Pour the mixture into a mold or two small serving cups. Allow it to cool at room temperature for about 10 minutes.
  6. Once cooled, refrigerate for at least 20 minutes or until set completely.
  7. To serve, gently unmold the Mizuyokan and cut it into slices, or serve directly in the cups. Enjoy chilled.
