Ingredients

  • Cauliflower - 300 grams
  • Egg - 1 large
  • Mozzarella cheese, shredded - 100 grams
  • Cream cheese - 30 grams
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Shallots, finely chopped - 30 grams
  • Chicken thigh, cooked and shredded - 100 grams
  • Shiitake mushrooms, sliced - 50 grams
  • Green onions, chopped - 20 grams
  • Mixed bell peppers, sliced - 50 grams
  • Nori sheets, cut into strips - 2 sheets
  • Black sesame seeds - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Steam the cauliflower florets for about 10 minutes until tender, then drain and let cool.
  3. Once the cauliflower is cool, blend it in a food processor until it resembles a rice-like texture.
  4. In a bowl, mix the blended cauliflower with egg, mozzarella cheese, cream cheese, soy sauce, and sesame oil until well combined.
  5. Spread the cauliflower mixture onto a baking sheet lined with parchment paper, shaping it into a round pizza crust about 1 cm thick.
  6. Bake the crust in the preheated oven for 15-20 minutes until golden and firm.
  7. While the crust is baking, prepare the toppings by sautéing the shallots and shiitake mushrooms in a pan over medium heat until soft.
  8. Once the crust is done, remove it from the oven and layer the shredded chicken, sautéed shallots, shiitake mushrooms, and sliced bell peppers evenly over the crust.
  9. Return the pizza to the oven and bake for an additional 10 minutes to heat the toppings through.
  10. Remove from the oven, garnish with chopped green onions and nori strips, and sprinkle with black sesame seeds before serving.
