- Cauliflower - 300 grams
- Egg - 1 large
- Mozzarella cheese, shredded - 100 grams
- Cream cheese - 30 grams
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Shallots, finely chopped - 30 grams
- Chicken thigh, cooked and shredded - 100 grams
- Shiitake mushrooms, sliced - 50 grams
- Green onions, chopped - 20 grams
- Mixed bell peppers, sliced - 50 grams
- Nori sheets, cut into strips - 2 sheets
- Black sesame seeds - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- Steam the cauliflower florets for about 10 minutes until tender, then drain and let cool.
- Once the cauliflower is cool, blend it in a food processor until it resembles a rice-like texture.
- In a bowl, mix the blended cauliflower with egg, mozzarella cheese, cream cheese, soy sauce, and sesame oil until well combined.
- Spread the cauliflower mixture onto a baking sheet lined with parchment paper, shaping it into a round pizza crust about 1 cm thick.
- Bake the crust in the preheated oven for 15-20 minutes until golden and firm.
- While the crust is baking, prepare the toppings by sautéing the shallots and shiitake mushrooms in a pan over medium heat until soft.
- Once the crust is done, remove it from the oven and layer the shredded chicken, sautéed shallots, shiitake mushrooms, and sliced bell peppers evenly over the crust.
- Return the pizza to the oven and bake for an additional 10 minutes to heat the toppings through.
- Remove from the oven, garnish with chopped green onions and nori strips, and sprinkle with black sesame seeds before serving.
