Ingredients

  • Chicken thigh fillets - 300 grams, boneless and skinless
  • Dashi stock - 500 ml
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Sake - 1 tablespoon
  • Napa cabbage - 150 grams, chopped
  • Shiitake mushrooms - 100 grams, sliced
  • Carrot - 1 medium, sliced
  • Green onions - 2, chopped
  • Tofu - 150 grams, cubed
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a pot, combine dashi stock, soy sauce, mirin, and sake, and bring to a gentle simmer over medium heat.
  2. Add the chicken thigh fillets to the pot and cook for about 10 minutes, until the chicken is cooked through.
  3. Add the chopped napa cabbage, sliced shiitake mushrooms, and carrot to the pot, and continue to simmer for an additional 5-7 minutes until the vegetables are tender.
  4. Stir in the cubed tofu and allow to heat through for about 2-3 minutes.
  5. Season with salt and pepper to taste, and drizzle with sesame oil just before serving.
  6. Garnish with chopped green onions and serve hot, optionally with a side of steamed rice.
