- Chicken thigh fillets - 300 grams, boneless and skinless
- Dashi stock - 500 ml
- Soy sauce - 2 tablespoons
- Mirin - 1 tablespoon
- Sake - 1 tablespoon
- Napa cabbage - 150 grams, chopped
- Shiitake mushrooms - 100 grams, sliced
- Carrot - 1 medium, sliced
- Green onions - 2, chopped
- Tofu - 150 grams, cubed
- Sesame oil - 1 teaspoon
- Salt - to taste
- Pepper - to taste
Steps
- In a pot, combine dashi stock, soy sauce, mirin, and sake, and bring to a gentle simmer over medium heat.
- Add the chicken thigh fillets to the pot and cook for about 10 minutes, until the chicken is cooked through.
- Add the chopped napa cabbage, sliced shiitake mushrooms, and carrot to the pot, and continue to simmer for an additional 5-7 minutes until the vegetables are tender.
- Stir in the cubed tofu and allow to heat through for about 2-3 minutes.
- Season with salt and pepper to taste, and drizzle with sesame oil just before serving.
- Garnish with chopped green onions and serve hot, optionally with a side of steamed rice.
