Ingredients

  • Chicken thighs - 300 grams, boneless and skinless
  • Water - 1 liter
  • Daikon radish - 100 grams, sliced
  • Carrot - 100 grams, sliced
  • Shiitake mushrooms - 100 grams, sliced
  • Napa cabbage - 150 grams, cut into chunks
  • Green onions - 2 stalks, chopped
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Salt - to taste
  • Sesame oil - 1 teaspoon
  • Tofu - 100 grams, cut into cubes

Steps

  1. In a large pot, bring 1 liter of water to a boil.
  2. Add the chicken thighs and simmer for about 10 minutes until cooked through.
  3. Remove the chicken, let it cool slightly, then cut it into bite-sized pieces.
  4. In the same pot, add the daikon radish, carrot, shiitake mushrooms, and napa cabbage. Cook for about 5-7 minutes until the vegetables are just tender.
  5. Stir in the chopped green onions, soy sauce, mirin, and sesame oil. Adjust the seasoning with salt to taste.
  6. Add the tofu cubes and the cooked chicken back into the pot, heating through for an additional 2-3 minutes.
  7. Serve hot, allowing each person to ladle the broth and ingredients into their bowls.
