- Chicken thighs - 300 grams, boneless and skinless
- Water - 1 liter
- Daikon radish - 100 grams, sliced
- Carrot - 100 grams, sliced
- Shiitake mushrooms - 100 grams, sliced
- Napa cabbage - 150 grams, cut into chunks
- Green onions - 2 stalks, chopped
- Soy sauce - 2 tablespoons
- Mirin - 1 tablespoon
- Salt - to taste
- Sesame oil - 1 teaspoon
- Tofu - 100 grams, cut into cubes
Steps
- In a large pot, bring 1 liter of water to a boil.
- Add the chicken thighs and simmer for about 10 minutes until cooked through.
- Remove the chicken, let it cool slightly, then cut it into bite-sized pieces.
- In the same pot, add the daikon radish, carrot, shiitake mushrooms, and napa cabbage. Cook for about 5-7 minutes until the vegetables are just tender.
- Stir in the chopped green onions, soy sauce, mirin, and sesame oil. Adjust the seasoning with salt to taste.
- Add the tofu cubes and the cooked chicken back into the pot, heating through for an additional 2-3 minutes.
- Serve hot, allowing each person to ladle the broth and ingredients into their bowls.
