  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Green onions - 2, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a medium pot, heat the sesame oil over medium heat.
  2. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
  3. Stir in the sliced shiitake mushrooms and julienned carrot, cooking for another 3-4 minutes until the vegetables are slightly softened.
  4. Pour in the vegetable broth and bring to a gentle boil.
  5. Once boiling, reduce the heat and add the mizuna greens, soy sauce, salt, and black pepper.
  6. Simmer the soup for an additional 5-7 minutes until the mizuna is tender but still vibrant.
  7. Remove from heat and serve hot, garnished with chopped green onions.
