Ingredients

  • Almond flour - 150g
  • Mozzarella cheese (shredded) - 150g
  • Cream cheese - 50g
  • Egg - 1 large
  • Baking powder - 1 tsp
  • Salt - 1/2 tsp
  • Olive oil - 1 tbsp
  • Mizuna greens - 100g
  • Cherry tomatoes (halved) - 100g
  • Parmesan cheese (grated) - 30g
  • Garlic (minced) - 1 clove
  • Black pepper - to taste

Steps

  1. Preheat your oven to 220°C (425°F).
  2. In a mixing bowl, combine the almond flour, mozzarella cheese, cream cheese, egg, baking powder, and salt. Mix until a dough forms.
  3. Line a baking sheet with parchment paper and spread the dough into a round pizza shape, about 1 cm thick.
  4. Bake the crust in the preheated oven for 10-12 minutes, or until golden brown.
  5. While the crust is baking, prepare the toppings: in a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  6. Add the mizuna greens and cherry tomatoes to the skillet, cooking for about 3-4 minutes until the greens are wilted and the tomatoes are slightly softened. Season with black pepper to taste.
  7. Remove the crust from the oven and evenly distribute the mizuna and tomato mixture on top.
  8. Sprinkle the grated Parmesan cheese over the top and return the pizza to the oven for an additional 5-7 minutes until the cheese is melted and bubbly.
  9. Remove from the oven, let cool slightly, slice, and serve warm.
