Mizuna no Ohitashi

Ingredients

  • Mizuna greens - 150 grams
  • Water - 500 milliliters
  • Soy sauce - 2 tablespoons (30 ml)
  • Mirin - 1 tablespoon (15 ml)
  • Bonito flakes - 1 tablespoon (5 grams)
  • Sesame seeds - 1 teaspoon (5 grams)
  • Salt - 1/4 teaspoon (1.5 grams)

Steps

  1. Bring 500 milliliters of water to a boil in a pot. Add 1/4 teaspoon of salt to the boiling water.
  2. Add 150 grams of mizuna greens to the boiling water and blanch for about 1-2 minutes until just wilted.
  3. Remove the mizuna from the pot and immediately transfer it to a bowl of ice water to stop the cooking process. Let it cool for a few minutes.
  4. Once cooled, drain the mizuna and gently squeeze out any excess water. Set aside.
  5. In a small bowl, combine 2 tablespoons of soy sauce, 1 tablespoon of mirin, and 1 tablespoon of bonito flakes. Stir well to mix.
  6. Place the drained mizuna in a serving dish and pour the soy sauce mixture over it. Toss gently to coat the greens evenly.
  7. Sprinkle 1 teaspoon of sesame seeds on top for garnish before serving.
